Dark Chocolate Mousse

Dark Chocolate Mousse


  • 175g dark chocolate
  • splash of milk
  • 1 egg yolk
  • 4 egg whites
  • 25g sugar
  • fresh starwberries to serve


Break the dark chocolate into small pieces and melt in a bowl over simmering water. Pour in the milk and mix well. Remove the bowl from the heat and whisk in the egg yolk. Allow to cool.

In a bowl, whisk the egg whites until they form soft peaks, adding the sugar little by little as you do so.
Fold a quarter of the egg whites into the chocolate, and then whisk briefly. Carefully fold in the remaining egg whites.
Pour into 4 ramekins or serving bowls and chill for at least an hour. Serve with sliced starwberries.
