Garlic Prawns

This is a simple but really nice Prawns recipe.
Garlic Prawns

  • 3 tbsp olive oil
  • 12 large raw prawns
  • 4 cloves garlic, 3 roughly chopped, 1 left whole
  • 2 dried chillies, sliced (the finer the better) or 1 fresh red chilli
  • 100ml dry white wine
  • 1 pack flat-leaf parsley, stalks removed
  • 1 lemon (optional)


Put a frying pan on a high heat and pour in 2 tbsp oil.

When the oil is almost smoking, lay the prawns in the pan. Cook for 2 minutes, then turn over and add the chopped garlic and chilli.

When the garlic is golden brown, add the wine (watch the flame) and cook over a high heat until reduced by half. Season.

Add the parsley to the prawns and serve in warm bowls or plates Spoon over plenty of juices and serve with a wedge of lemon.
